In collaboration with Derica from City Steading Brews and Stefanie from Making Pour Decisions, we each made a Triple Goddess inspired mead. Derica got Maiden, Stephanie got Mother, and I got Crone.
I was more than happy (I think I even volunteered) to make a Crone inspired mead – aka a mead inspired by Fall & Winter. There are so many options for ingredients, but I had to choose a couple of my favorites – Grape, Pomegranate & Maple Syrup.
This mead turned out so rich and decadent, it really embodies the season with its full mouthfeel and rich complexity. If anything could be changed, it may be to dial down the ingredients slightly.
Primary:
1/2 pack Lalvin KV-1116 yeast
1 quart Red Concord Juice (Knudson’s)
1 quart Pomegranate Juice (Knudson’s)
12 oz Maple Syrup
1 lb Hawaiian Wildflower honey

Used GoFerm & TOSNA with FermaidO
Optional: 1.09 g Opti-White

Back-sweeten with another 12 oz Maple Syrup
Acid & Tannin were balanced, so no adjustments made (Could run some bench trials)
