Fig, Pear, & Almond Mead

Can you make mead with nuts? This is a question that’s debated on in many forums across the internet regarding mead, and the answer is YES. The reason it’s such a hot topic is, if you ferment with nuts, the mead can turn rancid due to oil. Used in secondary, nut oil will leave a layer at the top of your mead, and many will rack underneath it – which, you will still run the risk of carrying the oil over.

So how do you avoid this? Use something like Amoretti’s Almond Paste that is oil free! You may also press oil out of nuts, though that is time consuming and labor intensive (it may still be worth the work!).

This mead is DELISH and I am SO HAPPY I have 1 left to try in a couple years time.

Primary:
1/2 pack Lalvin D47
1.5 lb Orange Blossom Honey
1 Quart Pear Juice
4lb Fresh Frozen Figs (chopped & thawed)

Secondary:
Rack & Stabilize (Wait 24 hours)
1lb 3oz (4 pears) Very Ripe Fresh Bartlett Pears
8oz Amoretti Premium Almond Paste
1/8 lb Dried Figs Sliced
1/8 Wine Tannin
1/4 Cup Orange Blossom Honey
