Chocolate Orange is a bit more on the complex side, but totally worth it! This flew off my shelf and I found myself wishing I made a larger batch (definitely on my repeat recipe list). In fact, this recipe was the first time filming, but second time making – and this recipe transformed quite a bit from the original in the best of ways. I definitely feel good about sharing this one, and encourage folks to adjust and play with the recipe.
As a warning: Orange Juice does take a few months to settle into the mead. In the beginning the flavor will be very odd, but the longer it sits, the better it gets (at least up to the first year), so be patient.
Primary:
1/2 packet Mangrove Jack 05 Yeast
2lb Orange Blossom Honey
2 tsp Sweet Orange Peel
Followed TOSNA 2.0 Nutrient Schedule & GoFerm
Secondary:
Racked
Stabilized
Added OJ to taste
1/2 cup Toasted Cacao Nibs (350 degrees F for 10-15 min)
Backsweetened with Orange Blossom Honey
1/8 tsp Tannin
1/8 tsp Malic Acid
1/2 tbsp Sweet Orange Peel
.16 oz Mocha Oak Chips
