At one point during the Pandemic, while I was in community college, I decided to make a couple of session meads for easy content. I had been wanting to try some sparkling sessions, but really… I just didn’t have time to film/edit/etc.
I made three different meads, in the course of several videos… which were like, a max of 5 min each which really bummed some folks out. (Just keep in mind these videos are VERY short if you watch them)
I will tell you right now, the Blueberry Mint was by far my favorite! For one thing, it was ready to drink like, right away. As soon as those carbonation drops did their thing and there was a couple of weeks worth of bottle conditioning, it was READY.
The strawberry mead was alright (I’m actually in the process of re-making this one), I think my biggest issue was the fact that the strawberries were fermented. Instantly the aging time needs to be increased for that ferment taste to die down, which is a bummer (at least for me, I’m not the biggest fan of that flavor). To avoid this issue, stabilize, add your strawberries, then force carbonate using a keg.
The Kiwi mead… not so great. Not great at all actually. I’m not sure how long it takes kiwis to settle when they’re fermented, but maybe secondary is the best way to go for that one.

This last video is the tasting of all three together with my cousin. There wasn’t a year tasting for these, because umm… I didn’t really consider that and I drank them all!
Below is the recipe for the Blueberry Mint because that was my favorite. Side note: If I remade this I would simply use a blueberry juice base with perhaps some whole fruit and ferment that, rather than adding fruit to secondary. Adding to secondary will cause the mead to re-ferment, and it’s best to avoid that for flavor due to yeast stress. I would also back sweeten and keg this mead.
Primary:
1lb Orange Blossom Honey (Can be changed)
18oz Blueberries
*Please use nutrient schedule
Secondary:
Added 2lb Blueberries
Bundle of fresh Mint Leaves
Racked & added 3 tbsp Erythritol (recommended non-sugar)
At bottling I used carbonation drops (this does cause re-fermentation)
